a spaghetti squash baby.

happy wednesday! 
we are halfway through the week, which means i am behind on my weekly update (shocking, i know :)) and am 21.5 weeks now or about 5 months for those of you normal peeps counting in months! baby boy is about the size of a spaghetti squash from the tiny little hairs that are now growing on his head to his cutie little bootie, and he's ONE POUND! i love him so. 
no fun photos this week, but instead a recipe! spaghetti squash with brown sugarrrr, yumm!!

Ingredients

1 spaghetti squash, halved lengthwise & seeded
2 tablespoons butter, softened
2 tablespoons cold butter
1/4 cup brown sugar

Directions

  1. Preheat an oven to 400 degrees F (200 degrees C). Line a large baking dish with aluminum foil.
  2. Generously spread the softened butter over the flesh of the squash; lie in the prepared baking dish with the cut sides facing down.
  3. Bake in the preheated oven for 30 minutes. Flip the squash and put about half the butter and about half the brown sugar in each of the cavities of the squash halves. Return to the oven until the outer shell is soft, about 10 minutes more. Spoon the flesh of the squash into a bowl to serve.
